Veggie bowl – how many ways??

Often when clients are starting out with me, one of the biggest challenges they face is not knowing what to eat.

Once we decide to put the processed, fake meat and dairy, gluten free this and that down, they become stumped and feel betrayed by the terrible misinformation they have built their ‘healthy food’ knowledge bank from.

There’s many ways to address this problem! One that particularly helped me early on in my own journey was to focus on making the meals I loved, with plenty of clean, whole food swaps and adaptations.

As I got more confident in the kitchen, I learned how to substitute dairy cream for coconut cream, regular flour for coconut flour or almond flour and so on.

I also learned sneaky ways to achieve a desired effect normally only possible from deep frying, by clever manipulation of seasonings and cookery tools (all of which I’ve shared openly in various posts here throughout the years).

The fundamentals though, are always to focus on eating 10 portions of colourful vegetables a day, everyday (because some days you won’t be able to, but the vast majority of days where you’ve hit your quota will mitigate that).

I challenged myself to show my clients and followers that you can come up with various configurations of cooking the same vegetables, but giving each dish a different flavour and ‘mood’.

I came up with 3 variations, but could have easily come up with at least 6 more (I advise everyone to not eat exactly the same foods everyday for optimal nutrient and beneficial bacterial diversity).

I went for a Japanese, Italian and West African inspired bowl, but could easily have made this Lebanese, Thai, Moroccan, Turkish, Egyptian, Chinese…

Now I’d like to pose the same challenge to you! What delicious meal could you make from the ingredients in the bowl for yourself and your family?

You can ADD to the bowl, but you have to 𝗨𝗦𝗘 𝗘𝗩𝗘𝗥𝗬𝗧𝗛𝗜𝗡𝗚 in there to make a sumptuous, multicoloured, delicious and nutritious meal.
