Easily makes 10 heaped tbsps:
Ingredients:
-200ml Full fat coconut milk (I like @biona)
-1 tbsp Organic maple syrup
-1 tbsp xylitol or stevia
-2 drops of vanilla extract
-1/2 tsp sea salt or Himalayan salt (don’t -you dare use table salt)
In a small non stick saucepan, dash in the milk + stevia/xylitol + maple syrup + vanilla extract.
Turn the heat up to medium-high.
Whisk with a fork continuously. Watch for the mixture to start simmering, keep whisking.
Keep this up for at least 10-15 minutes. You’ll know it’s ready when the mixture is bubbling away and turns a golden/toffee shade.
Once the mixture looks like it’s browned to your liking, take it off the heat.
Leave to cool and start thickening for 5 mins and then add in the salt.
Mix again, and leave to cool down and thicken more.
Can be used in baking cookies, as a sauce or even in your luxury coffees 😉
Waaaay cleaner and muchhhhh less glucose than your average caramel sauce, just as beautiful 😋
