Moroccan spiced warm salad

A delicious, colourful plate of vegetables to feed your bacteria (which make up 90% of your health!)

Ingredients for 1:

-1 purple carrot (or any colour)

-1 chicory, sliced thinly

-1 handful of rocket

-1 tomato, cut in 8ths

-1 handful of blueberries

-1/2 tsp ras el hanout seasoning

-1/2 tsp sea salt

-1/2 tsp lemon juice

-1.5 tbsps olive oil

-1/2tsp pomegranate molasses


1.Thickly slice your carrots diagonally, and steam for 3-4 mins max.

2.Once steamed, allow to dry as you prepare the rest of the salad.

3.Toss all the vegetables and blueberries together.

4.Whisk 1tbsp olive oil + lemon juice + pomegranate molasses + pinch of sea salt, and dress the salad evenly.

5.Dress the carrots in 0.5tbsps olive oil + pinch of sea salt + ras hanout seasoning.

6.Toss the carrots together with the rest of the salad.

7.Enjoy and receive thanks from your gut bacteria!
